NATIVE BEE HONEY
At Hive Haven we respect our bees and honour their honey through gentle harvesting and processing methods. Honey is removed from the food grade honey cartridge through cold extraction which is a slow but gentle process.
Australian native bee’s that create this honey are quite different from the average honey bee imported from Europe in the early 1800’s. Our tiny Australian native bee shared the land with dinosaurs, it was Australia’s very first pollinator. It has evolved into a powerful species that can impact our existence on the planet, however it is a threatened species. We are so fortunate that the Australian native bee has been identified an effective pollinator of our food crops but these precious critters need our help.
Aboriginal and Torres Straight Islanders have used stingless native bee honey as a food and medicine source for tens of thousands of years.

Native Australian honey contains a rare and naturally occurring sugar profile that is different from other honey’s. It’s called ‘trehalulose’ and it has a substantially lower Glycemic Index (GI) than regular honey. The lower GI means diabetics don’t experience the spike in blood sugar caused by glucose and fructose. Trehalulose is absorbed more slowly into the bloodstream. University of Queensland, organic chemist Associate Professor Mary Fletcher and her team of researchers, identified specific bioactive components in stingless bee honey, providing “concrete evidence” that supports the health benefits of this product. How does our honey obtain these benefits? Well, it’s probably because native bee honey is stored in and infused with stingless ‘native’ bee propolis, or ‘bee glue’. This ‘glue’ has been shown by numerous researchers to have many valuable healing and biomedical properties, including antibacterial properties comparable with medical-grade Manuka honey.

FESTIVE HONEY FILLED GOAT CHEESE BALLS
Drain a jar of Little White Goat Cheese. Roll a little ball from two goat cheese cubes with your hands. Then, with your finger, poke a little hole in the ball and fill with Hive Haven Native Honey. Close the hole with some more goat cheese and roll in a mix of seeds and dried fruit. We used hemp seeds, shaved almonds and cranberries. HONEY AND FINGER LIME VINAIGRETTE
Open Crystal Pearl Finger Lime and squeeze all the little juice balls into a small bowl. Mix with 1 teaspoon of Hive Haven Native Bee Honey, 1 teaspoon of vinegar, 1/2 teaspoon of Dijon mustard and salt & pepper. Slowly drizzle in 2 tablespoons of neutral oil (sunflower/canola/ vegetable) and keep on whisking.
If you’re feeling really decedent, find some ripe figs and split them in half. Mix a tiny amount of vanilla paste with freshly whipped cream and smear a on each part of the flesh. Drizzle our honey on top.
